Introduction

If you like an all-American breakfast with eggs, potatoes, and meat - this is a perfect meal prep solution! You can take this meal on the go and heat it up at work and it still tastes great! You can also get a serving of vegetables in for a great start to the day by adding in the broccoli.

How to Make

  • Pre-heat oven to 400 degrees

  • Chop potatoes into cubes and chop broccoli

  • Spray a baking sheet with olive oil cooking spray and spread out potatoes. Season potatoes with thyme, garlic, and black pepper. Bake for 25 minutes. (or put in air fryer for 10 minutes, mix them up, and then 8 more minutes)

  • Cook the broccoli however you prefer. I put in the air fryer for 8 minutes. You could also steam the broccoli or roast it in the oven.

  • Heat the chicken breakfast sausage according to the package instructions - I heated in a skillet in 1/2 inch of water for 5 minutes.

  • Scramble up the eggs in a large skillet.

  • Split the eggs, chicken sausage, and broccoli into 4 meal prep containers.

  • Sprinkle 5g of cheese on the eggs in each container.

  • 24 oz. Potatoes, chopped

  • 10 oz. Broccoli

  • 8 eggs

  • 8 Chicken Breakfast Sausages

  • 20g Shredded Mexican Cheese

  • Olive Oil Cooking Spray

  • 1/2 tsp thyme

  • 1 tsp minced garlic

  • Black pepper, to taste
