Introduction

This delicious basil thai chicken is so simple to make and super fast! Perfect for a weeknight dinner when you don't have a bunch of spare time to be cooking. Warning: you may want to double the recipe - it goes fast!

How to Make

  • Cook your rice according to the package instructions.

  • Add the chicken stock, soy sauce, fish sauce, vinegar, and brown sugar to a bowl. Mix well and set aside.

  • Spray a large skillet with Olive Oil cooking spray and heat on medium.

  • Throw in the minced garlic, the chili pepper, and the shallots and cook on medium heat, continuously stirring, for 2 minutes.

  • Add in the ground chicken and cook until fully cooked and browned, about 5 minutes.

  • Pour in the mixture with the chicken stock and continuously stir while cooking on medium heat, until the sauce has thickened - about 3 minutes.

  • Stir in the basil until wilted, about 1 minute.

  • Serve on top of rice & enjoy!

Ingredients

  • 1 lb. Ground Chicken

  • 0.5 cup Chicken Stock

  • 1.5 cups Fresh Basil Leaves

  • 1 red Thai Chili pepper, sliced

  • 2 Shallots, sliced

  • 3 Garlic Cloves, minced

  • 3 tbsp Reduced-Sodium Soy Sauce

  • 1 tbsp Fish Sauce

  • 1.5 tbsp Brown Sugar

  • 1.4 tbsp Rice Vinegar (unseasoned or lightly seasoned)

  • Olive Oil Cooking Spray

  • Rice (for serving)
