Introduction
This delicious basil thai chicken is so simple to make and super fast! Perfect for a weeknight dinner when you don't have a bunch of spare time to be cooking. Warning: you may want to double the recipe - it goes fast!
How to Make
Cook your rice according to the package instructions.
Add the chicken stock, soy sauce, fish sauce, vinegar, and brown sugar to a bowl. Mix well and set aside.
Spray a large skillet with Olive Oil cooking spray and heat on medium.
Throw in the minced garlic, the chili pepper, and the shallots and cook on medium heat, continuously stirring, for 2 minutes.
Add in the ground chicken and cook until fully cooked and browned, about 5 minutes.
Pour in the mixture with the chicken stock and continuously stir while cooking on medium heat, until the sauce has thickened - about 3 minutes.
Stir in the basil until wilted, about 1 minute.
Serve on top of rice & enjoy!

1 lb. Ground Chicken
0.5 cup Chicken Stock
1.5 cups Fresh Basil Leaves
1 red Thai Chili pepper, sliced
2 Shallots, sliced
3 Garlic Cloves, minced
3 tbsp Reduced-Sodium Soy Sauce
1 tbsp Fish Sauce
1.5 tbsp Brown Sugar
1.4 tbsp Rice Vinegar (unseasoned or lightly seasoned)
Olive Oil Cooking Spray
Rice (for serving)
