Introduction
This is a yummy breakfast meal prep idea that can be heated up quickly for when you're in a rush in the mornings! It will help you get a great start to your day and provides protein to help keep you full and carbs to give you energy for your day ahead.
How to Make
Pre-heat oven to 400 degrees.
Chop broccoli, red bell pepper, onion and chicken breakfast sausage links.
Spray a skillet with Olive Oil Cooking Spray. Brown hashbrowns on medium heat - about 8 minutes.
Saute the broccoli, red pepper, and onions on medium heat until softened.
Spray a 9x13 baking dish with Olive Oil cooking spray.
Line the baking dish with the hashbrowns. Add the veggies and chicken sausage on top.
Whisk together the eggs and egg whites in a bowl. Pour mixture into the baking dish.
Bake for 25 minutes
Remove from the oven, sprinkle cheese on top and bake for 3-5 more minutes.

4 oz. Broccoli, chopping into small pieces
5.4 oz. Red Bell Pepper, chopped (1 medium)
2.5 oz. Onion, chopped
425g Frozen Hashbrowns
3 Chicken Breakfast Sausage links
5 Eggs
2 Cups Egg Whites
28g Shredded Mexican Cheese
