Ground Turkey & Mashed Cauli Shepherd's Pie

Introduction

This Shepherd’s Pie inspired dish is full of veggies, tastes delicious, and is super simple to make for a weeknight dinner! The best part about this recipe is that you can change out the ground turkey for whatever meat you prefer and change the ratio of mashed potatoes to mashed cauliflower depending on the level of carbohydrates you want!

Ground Turkey & Mashed Cauli Shepherd's Pie

How to Make

  1.  Spray a frying pan with olive oil cooking spray and cook ground turkey on medium heat until tender, about 7-10 minutes.

  2. Preheat oven to 400 degrees.

  3. Make up your mashed potatoes by boiling and mashing them with butter, milk, and salt (according to preference or boxed potato instructions)

  4. Make up your mashed cauliflower. I used frozen, boxed mashed cauliflower and simply threw it in the microwave according to the instructions on the box.

  5. Mix the mashed potatoes and mashed cauliflower together in a bowl.

  6. Spray a large skillet with olive oil spray and heat on low heat.

  7. Toss minced garlic into the skillet and heat for about 3 minutes.

  8. Add the frozen vegetables, chicken broth, flour, tomato paste, and Worcestershire sauce to the skillet and mix well. Add in the cooked ground turkey and mix well again. Heat for 10 minutes on low.

  9. Pour the ground turkey mixture into the bottom of a casserole dish and spread it out so it covers the entire bottom of the dish.

  10. Top the meat with the mashed cauliflower and mashed potato mixture.

  11. Bake for 18 minutes.

  12. Remove from the oven and sprinkle cheese on top.

  13. Return to the oven and bake for 6 more minutes.

Ingredients

  • Olive Oil Cooking Spray

  • 2 - 12oz boxes of Mashed Cauliflower

  • 44g Mashed Potatoes (also requires butter, salt & milk)

  • 1 ½ Pounds Ground Turkey

  • 3 Teaspoons Minced Garlic

  • 12 oz bag of Frozen Mixed Vegetables

  • 3 Tablespoons Flour

  • 1 ½ cup Chicken Broth

  • 3 Teaspoons Tomato Paste

  • 1 ½ Teaspoons Worcestershire Sauce

  • ¾ Cup Shredded Mexican Cheese
