Turkey Enchiladas

Introduction
These delicious enchiladas are full of ground turkey, spinach, and bell pepper and topped with enchilada sauce, cheese, lettuce, and salsa! They are simple to make and are perfect for a filling, healthy dinner! They are so easy to make, they are one of the most common meals I cook up for dinner - especially when I'm short on time!
If you are looking for a lower carb meal, you can use less than 8 tortillas and the same amount of meat. Each enchilada will then have more meat, so you’ll need to eat less tortillas!
How to Make
1. Pre-heat oven to 400 degrees.
2. Chop red pepper and spinach.
3. Spray a large skillet with olive oil cooking spray and heat on medium. Brown the ground turkey for about 5 minutes then add the chopped red pepper. Continue cooking for about 8 more minutes and then add the spinach to wilt for the last 2-3 minutes. Take skillet off the burner and prepare to fill the tortillas.
4. Spray a 9x13 baking dish with cooking spray.
5. Lay out your 8 tortillas and put 1/3 cup of cheese in a bowl. Pour the enchilada sauce in a bowl.
6. Dunk a tortilla in enchilada sauce, cover both sides, lay on a plate, scoop in 1/8 of the turkey mixture, and add in 1/8 of the cheese. This part can get a bit messy – but it’s worth it!
7. Roll up the tortilla and place it in the baking dish with the opening facing down.
8. Repeat steps 6&7 for all 8 tortillas.
9. Pour the remaining enchilada sauce over the enchiladas in the pan.
10. Sprinkle the remaining ½ cup of cheese on top.
11. Place in oven for 15 minutes (until cheese is melted and the tortillas are crispy on the outside)
12. Add shredded lettuce and salsa to taste when serving.

Ground Turkey, 1lb.
Old El Paso Red Enchilada Sauce, Medium, 20 oz.
1 Red Bell Pepper
Ole Extreme Wellness High Fiber Tortillas, 1 package of 8
Shredded Iceberg Lettuce
Baby Spinach, 2 cups
Shredded Mexican Cheese, 1/3 cup for inside enchiladas & ½ cup for topping
Salsa
